Banana Chocolate Chip Muffins
A tasty treat

INGREDIENTS
 
  • 5 ripe bananas, mashed
  • 2 cups sugar
  • 2 eggs
  • ½ cup canola oil
  • 1 cup applesauce
  • 2 tablespoon vanilla
 
  • ¼ cup buttermilk
  • 4 cups flour
  • 1 tablespoon baking soda
  • 1 ½ cups chocolate chips
 

DIRECTIONS
 
  • Preheat the oven to 300°
  • Divide 18 baking cups between two muffin pans
  • In a large bowl, whisk together the bananas, sugar, eggs, oil and applesauce until well combined
  • Blend in the buttermilk and vanilla
  • Stir in the baking soda and flour just until blended
  • Gently stir in the chocolate chips

 

 
  • Spoon the batter into the prepared pans, filling the cup to the top
  • Bake for 45 to 50 minutes or until a tester inserted in the center comes out clean
  • In order for both pans of muffins to bake evenly, be certain to switch the 2 trays around in the oven during baking

Blueberry Muffins
A tasty treat

INGREDIENTS
 
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 teaspoons cinnamon
 
  • 4 teaspoons baking powder
  • 4 cups flour
  • 1 cup milk
  • 2½ cups blueberries
 

DIRECTIONS
 
  • Preheat oven to 375°
  • Line muffin pan with baking cups
  • With an electric mixer, beat softened butter until creamy
  • Add in sugar and beat until light and fluffy
  • Add eggs, one at a time, and beat thoroughly
  • Stir in vanilla, cinnamon, and baking powder
  • Mix at medium high for a minute
  • Add half of the flour and mix at the lowest speed (or stir in flour and milk by hand) until barely combined
 
  • Pour in half the milk and stir just until combined
  • Mix in the remaining flour and milk, being careful not to over mix the batter
  • Stir in the blueberries
  • Scoop out the batter into the prepared muffin pans
  • Sprinkle the tops with sugar
  • Bake until the muffins are browned on top and spring back when lightly pressed, about 35-45 minutes

The Espresso Love staple, we are often told these are the best blueberry muffins, ever!  Simple and easily adaptable, but be careful not to over mix when adding the flour or your muffins will be thick and cakey, rather than moist and delicate.
