 |  | | Blueberry Muffins | | A tasty treat | INGREDIENTS | | | - 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 2 teaspoons cinnamon
| | - 4 teaspoons baking powder
- 4 cups flour
- 1 cup milk
- 2½ cups blueberries
| | DIRECTIONS | | | - Preheat oven to 375°
- Line muffin pan with baking cups
- With an electric mixer, beat softened butter until creamy
- Add in sugar and beat until light and fluffy
- Add eggs, one at a time, and beat thoroughly
- Stir in vanilla, cinnamon, and baking powder
- Mix at medium high for a minute
- Add half of the flour and mix at the lowest speed (or stir in flour and milk by hand) until barely combined
| | - Pour in half the milk and stir just until combined
- Mix in the remaining flour and milk, being careful not to over mix the batter
- Stir in the blueberries
- Scoop out the batter into the prepared muffin pans
- Sprinkle the tops with sugar
- Bake until the muffins are browned on top and spring back when lightly pressed, about 35-45 minutes
